Cous cous con sgombro e cozze - Cous cous with mackerel and mussels

Oggi vi presento un'altra dei miei piatti più riusciti: cous cous con pesce e cozze
Today I'm sharing another of my best recipes: cous cous with fish and mussels

La ricetta è nato "per caso" durante la vacanza della scorsa estate in Sardegna: c'era un furgoncino che vendeva pesce fresco e cozze locali proprio a due passi dal nostro bungalow e non ho resistito alla tentazione di assaggiarli, combinando gli ingredienti secondo l'ispirazione del momento
I created it "by chance" during last summer holiday in Sardinia: there was a van selling fresh fish and local mussels near our bungalow and I didn't resist the temptation to try them, mixing ingredients according to the inspiration of the moment

Ingredienti per 2 porzioni:
400gr di cozze (peso con gusci inclusi)
uno sgombro di media grandezza
uno spicchio d'aglio
prezzemolo tritato
due cucchiai di passata di pomodoro
1 bicchiere di cous cous (meglio se integrale)
mezzo bicchiere d'acqua
mezzo cucchiaino di curcuma in polvere
olio extra vergine di oliva
sale
Ingredients for 2 servings:
400gr mussels (weight includes shells)
one medium size mackerel
one clove of garlic
chopped parsil
two tablespoons of tomato puree
1 glass of cous cous (better if whole)
half glass of water
half teaspoon of curcuma powder
extra vergin olive oil
salt

Pulite le cozze (se le trovate già pulite tanto di guadagnato!) fate scaldare in una padella due cucchiai d'olio, unite le cozze, chiudete il coperchio e lasciate cuocere per alcuni minuti fino a quando si saranno aperte. Toglietele dalla padella, filtrate il liquido (potete usare una pezza di tessuto pulito a trama fine, tipo un fazzoletto di stoffa) e tenetelo da parte
Clean the mussels (if you find them already cleaned so much the better!) heat two tablespoons of oil in a pan, pour in the nussels, close the lid and let cook for some minutes until all the mussels are open. Remove the mussels from the pan, fitler the liquid (you can use a piece of thin clean fabric, like a handkerchief) and keep it aside

Pulire e sfilettate il pesce e tagliatelo a piccoli cubetti. In una padella pulita fate scaldare un po' di olio con l'aglio (io lo trito perchè mi piace tantissimo, ma se preferite potete lasciarlo intero in modo da rimuoverlo prima di servire) e il prezzemolo tritato. Unite il pesce e fatelo rosolare per un minuto, poi aggiungete la passata di pomodoro, le cozze (io le tolgo dai gusci per comodità) e qualche cucchiaio del loro liquido filtrato: siccome questo è piuttosto salato non dovrebbe esserci bisogno di aggiungere sale, nel dubbio assaggiat. Lasciate cuocere qualche minuto finchè il pesce sarà cotto
Clean and fillet the fish and cut it into small cubes. In a clean pan heat some oil with the garlic (I chopped it because I love garlic, but you can also let it whole so you can remove it before serving) and the chopped parsil. Add the fish and let cook for one minute, then add the tomato puree, the mussels (I remove the shells for ease) and some tablespoons of their filtered liquid: since this is really salty there should be no need to add more salt, in doubt taste it. Let cook some minutes until the fish is ready 

Nel frattempo portate ad ebollizione in un pentolino il mezzo bicchiere di acqua insieme a mezzo bicchiere del liquido delle cozze filtrato. In una ciotola mescolate il cous cous con un cucchiaio di olio e la curcuma. Quando il liquido bolle versatela sul cous cous, coprite con un coperchio e lasciate riposare per alcuni minuti finchè si sarà gonfiato (controllate le istruzioni sulla confezione per il tempo esatto). Una volta pronto suddividete il cous cous nei piatti lasciando al centro una conca nella quale andrete a versare il sugo di pesce e cozze
Meanwhile put to boil in a small pot the half glass of water together with half glass of the filtered mussels liquid. In a bowl mix the cous cous with one tablespoon of oil and the curcuma powder. When the liquid is boiling put it over the cous cous, cover with a lit and let sit for some minutes until it's swelled (check instructions on the package for the exact time). Once it's ready put the cous cous in the dishes leaving a hole in the middle where you will pour the fish and mussels
